A useful commercial kitchen cleaning checklist identifies what needs cleaning, who is responsible, when it is done and how completion is checked. Start with the actual kitchen and equipment, then identify any separate extraction or specialist work.
Use this guide to prepare a cleaning scope or compare quotations. EC Cleaners Network coordinates commercial enquiries; the food business retains its management responsibilities and the independently appointed specialist is responsible for its own work.
A practical kitchen cleaning checklist
- Areas and equipment: list preparation, cooking, wash-up, storage and staff areas, plus the equipment and surfaces in scope.
- Frequency and responsibility: assign routine tasks and identify periodic specialist work separately.
- Method and products: use suitable instructions for the surface, equipment and task.
- Access and preparation: agree who clears food, releases equipment and makes the area available.
- Completion: record what was done, who checked it and anything still outstanding.
GOV.UK food-business cleaning guidance explains that the schedule should cover items to clean or disinfect, frequency and products. Its linked food-safety packs provide practical schedule resources.
Separate routine cleaning, deep cleaning and extraction
Routine food-area cleaning
The business needs arrangements appropriate to its operations. A periodic contractor visit does not replace daily controls, supervision or the food-safety management system.
Kitchen deep cleaning
Define the equipment and accessible surfaces to be treated, any dismantling or movement, exclusions and the condition required before return to service.
Kitchen grease extraction
Canopies, filters, ductwork and fans need a defined system scope. Kitchen extract cleaning addresses this separate workstream.
General ventilation
Supply and general extract systems are distinct from cooking-grease systems. See TR19 Air ventilation hygiene.
For restaurant refits and openings, describe the build programme and remaining trades. Our QSR and franchise kitchen cleaning guide helps frame that requirement.
Request a scoped kitchen cleaning quote
Send the postcode, kitchen type, equipment or area list, current condition, photographs and preferred shutdown window. State whether the enquiry includes surface cleaning, kitchen extraction, general ventilation or work after a refit.
An initial enquiry does not book the work. The independent specialist confirms the final scope, availability and price.
Search and Submit Ltd uses your details to respond and coordinate the enquiry, including sharing relevant information with appropriate independent specialists. Read our Privacy Policy. Please omit unrelated personal or sensitive information.
Which standards and guidance should you use?
BESA TR19 Grease concerns grease-related fire risk in kitchen extraction; TR19 Air concerns internal cleanliness and hygiene of general ventilation. Neither is a certificate for cleaning every part of a kitchen.
For ventilation design or performance, see DW172 kitchen ventilation guidance. For the wider legal and maintenance picture, use the commercial kitchen regulations checklist.
Ask the appointed specialist to identify the relevant specification, system boundary and evidence for its work. Do not assume a cleaning appointment includes ventilation design, gas work, a fire-risk assessment or technical approval of the premises.
Prepare the kitchen before specialist work
Agree the shutdown window, keys, permits, water and power access, equipment availability and the person authorised to accept handover. Identify areas that must remain occupied or secure.
The contractor should set out suitable safe-working arrangements, product selection and any necessary isolation within its scope. The business should communicate known hazards, product restrictions and food-area requirements before attendance.
Read COSHH guidance for kitchen cleaning chemicals and HACCP and food-safety management guidance where relevant. Cleaning and food-safety management remain connected but are different responsibilities.
What should the quotation and handover include?
- The agreed premises, areas, equipment and systems.
- Included tasks, access assumptions and exclusions.
- Working dates, price, additional charges and VAT where applicable.
- The completion check, photographs or technical report agreed for the scope.
- Inaccessible, unfinished or damaged items and the next action required.
For extraction work, use the TR19 certificate and post-clean report guide. A photograph or certificate should be read alongside the actual scope and limitations.
Review the arrangements when equipment, menus, operating hours, conditions or work methods change. A generic schedule cannot set the correct interval for every task or site.
Costs and contractor responsibilities
The price depends on the areas, equipment, contamination, access, working window and reporting required. Separate kitchen surface work from internal extraction and other technical packages when comparing quotations.
For extraction-specific cost factors, see TR19 kitchen extract cleaning prices. That scope should not be treated as the price for the whole kitchen.
Before appointment, use contractor assurance checks to confirm the supplier and scope. A cleaning service cannot guarantee overall regulatory compliance, an insurance outcome or a Food Hygiene Rating.

Frequently asked questions
What should a commercial kitchen cleaning checklist include?
List the areas, equipment, tasks, frequency, responsible people, suitable methods and completion checks. Identify periodic specialist work, access requirements and outstanding actions separately.
Does a kitchen deep clean include extraction ductwork?
Only if the extraction system and relevant components are expressly included in the appointed specialist scope. Cleaning visible kitchen surfaces does not establish that internal ductwork has been treated.
How often should a commercial kitchen have a deep clean?
The schedule depends on the tasks, use, condition and relevant risk or maintenance requirements. Keep routine food-area cleaning and periodic specialist work clearly defined; there is no single interval for every kitchen task.
Does a cleaning certificate prove full kitchen compliance?
No. A contractor record describes the work within its scope. It does not replace food-safety management, a fire-risk assessment, gas or ventilation assessment, or the requirements of the insurer.
