Extraction & Ventilation Support for Food Production Sites
In production, the wrong shutdown window can cost more than the maintenance work itself.
Food factories, bakeries, production kitchens and distribution environments can contain several very different air-handling systems: grease extract from cooking operations, general building ventilation and process local exhaust ventilation. The maintenance task has to fit the production process.
A restaurant normally has one dominant kitchen operation. A food-production site may contain processing lines, ovens, fryers, baking equipment, packing areas, chillers, high-level services, general HVAC, process extract and staff-catering facilities under the same roof.
The first commercial question is therefore not “who can clean the ducts?” It is which system has triggered concern, what production area it serves, what contamination or operational risk surrounds the work and when the site can safely release that area for specialist attendance.
Identify the system before choosing the contractor.
Grease extract serving a cooking operation
A factory can contain commercial or industrial cooking areas that generate grease-laden extract air. Where the system falls within commercial kitchen extraction, the relevant grease-extract scope should follow the system beyond the visible hood and make known access limitations clear before attendance.
General ventilation hygiene
Supply and extract ventilation serving production, welfare, office or other building areas is a separate workstream. TR19® Air concerns internal cleanliness and hygiene management of general ventilation systems and should not be used as a catch-all label for every industrial extraction system.
Process LEV or contaminant control
Where equipment is intended to capture harmful dust, mist, fume or gas at source, the system may be local exhaust ventilation. HSE treats LEV as an engineered exposure-control system with its own design, commissioning, use, maintenance and testing requirements. It should not be reclassified as TR19 Air simply because it contains ductwork.
A report identifies inaccessible areas
Production lines, ceilings, high-level services, enclosed plant or restricted hygiene areas can prevent technicians reaching part of a system. The unresolved access problem should become visible as a separate action rather than disappearing inside a routine cleaning cycle.
Use the engineering window for delivery—not for discovering site restrictions.
Food-production maintenance often competes for the same shutdown period as deep cleaning, engineering works, refrigeration, electrical maintenance, inspections and production changeovers. Specialist extraction or ventilation work therefore needs enough site information in advance to avoid consuming the window with preventable access questions.
The contractor may also need to understand hygiene entry rules, protective clothing, tool and equipment controls, production-area segregation, cleaning-down expectations and the point at which the area can be released back to the site’s own hygiene or production team.

A food factory can contain three different air-management problems.
The Food Standards Agency’s MyHACCP tool is aimed specifically at food manufacturers and is designed to support food-safety management based on HACCP principles. Its prerequisite guidance includes cleaning and disinfection, equipment cleaning and maintenance, utilities and measures to prevent contamination. That food-safety framework should remain visible when contractors work above or within production areas.
HSE treats local exhaust ventilation separately. LEV is used to control harmful airborne contaminants such as dust, mist, fumes or gas at or near source, and HSE publishes specific guidance covering design, commissioning, checking, maintenance and testing. A process LEV system is therefore not automatically a TR19 Air system merely because air travels through ductwork.
BESA’s current TR19® Air specification addresses internal cleanliness and hygiene management of general ventilation systems in commercial and public buildings. BESA explicitly notes that grease fire-risk management in kitchen extract is covered separately under TR19® Grease.
A cooking-line grease extract, building HVAC system and process LEV installation may require different competent people, technical standards, inspection methods and close-out records. EC’s role is to help make the commercial requirement clearer before the appropriate specialist is appointed.
Central control needs system type as well as site status.
A manufacturing group can inherit different site layouts, maintenance contractors, terminology and document formats across factories, bakeries and distribution sites. A portfolio view becomes much more useful when it distinguishes the type of system involved instead of putting every air-related action into one “ventilation cleaning” category.
That allows central engineering or facilities teams to separate genuine routine work from items requiring an occupational-hygiene specialist, an M&E decision, access remediation or another competent trade.
Capability has to match the system and the production controls.
Relevant appointment questions may include legal identity, competence for the exact work type, applicable VHR status where relevant, insurance, technical scope, access assumptions, safe working arrangements, contamination controls, high-level methodology, subcontracting and the records expected at completion.
For process LEV, engineering or occupational-hygiene competence may be materially different from kitchen-extract or general ventilation-hygiene competence. A national cleaning contractor should not be assumed to cover every technical air-control system simply because all of them use fans and ducts.

Send the site, production area, type of process, what has triggered action, the available shutdown window and any existing report, drawing, quotation or photographs. If the system type is unclear, provide what you have rather than assuming it is TR19 work.
